Origin and history of sushi
Sushi has its origin in the Southeast Asian region. It developed from the desire to preserve fresh raw fish by means of fermentation. For this purpose it was salted like cabbage and pressed for months in a barrel between layers of rice. The rice was first thrown away. Later it was discovered that fermentation could be shortened by dispensing with salt and pressure and instead adding vinegar to the rice. Based on this knowledge, modern sushi in all its variations was created.
Sushi variations
In the West, there are two main types of Sushi:
- Nigiri: Rice topped with fish, seafood, fish roe or vegetables
- Maki: Rice, fish or vegetables rolled up in nori leaves (algae).
