The fire festival of the spring onion
The traditional festival Calçotada (derived from "Calçots", Catalan for "spring onions") originates from the south of Catalonia. The culinary specialty at the heart of this peasant-themed folk festival is also called calçotada. Traditionally, calçots are grilled over an open fire until the outer skin is black. This is stripped off before eating, and the tender white inner part of the spring onion is dipped in a spicy sauce. You will enjoy a fantastic romesco sauce of tomatoes, garlic, almonds and hazelnuts with the calçots prepared over the fire.
